The Pummelo

So Kristyn and I went to Smith's the other day to buy apples (for apple crisp) and tortillas (not for apple crisp). After picking out some delicious apples we turned around to head to the tortillas and were greeted by the citrus section. A little table in front of the grapefruits caught our eye because there were these green citrus fruits bigger than grapefruits sitting there. Now I wasn't aware of any edible citrus fruit bigger than grapefruits, and neither was Kristyn, so we, in our awe, decided to buy one and try it out.

We brought it home and before eating it we checked it out on Wikipedia. Apparently it's quite a common fruit in Asia and is actually grown in large production here in the U.S. Who would have thought? It is also supposed to taste like a milder, sweeter grapefruit. Not being a big fan of grapefruit (I think they're gross) I was quite worried. They have quite a thick rind, so we decided to eat it like a grapefruit.

We cut it and each took half. I labored greatly at getting out the first section (not being experienced with grapefruits--see above), and in doing so got a nice squirt of pummelo juice in my face. Finally scooping out the fruit I took a bite. It didn't taste very sweet to me. It just tasted like a mild grapefruit. I struggled, but I finally finished the whole thing. Luckily Kristyn enjoyed it much more than I did. We determined that it might not have been ripe yet, as it is supposed to turn more yellow, according to Wikipedia. But in the end I don't think we'll be buying a pummelo again.

So if you're a fan of grapefruit and up for a new adventure, you may find a new delight in the pummelo (or pomelo as some spell it). But if you're like me and not big on bitter fruit, this is one experience you might want to pass up.

Washington Trip Recap

I haven't yet taken the opportunity to write about our trip to Washington State earlier this fall, so I better do that.

Taking a leaf out of Coral's book, I'll share the pages I've scrapbooked. Let me know what you think!

We spent the first two days of our trip with Preston's brother, Courtlan, and his family. We went to church with them and took a walk around Olympia's Capitol Building on Sunday.

The next day we went on a couple of outings with the kids. I didn't document them because they were both a little disappointing, but still fun. We went to a "cider mill" in hopes of finding some awesome Washington apples. That didn't happen. But they did have goats there who would climb up a tall tower and when you put feed in thier buckets they would actually operate a pulley to get the bucket up to them. They were super-goats!  We also went to Tumwater Park, where they have salmon ladders for the salmon swimming upstream. We didn't see any salmon in the ladders, but the park was a very pretty place.

That evening, we headed up to Seattle. We were a little early to check into our hotel, so we drove out to the Seattle temple. It was a really beautiful place.

While we were in Seattle, we went to the Olympic Sculpture Park. It's outdoors at the Seattle Museum of Art, and it's free! (our favorite feature!) It was a fun, albeit wet, experience.

We then walked to Pikes Place Market (it was a LONG walk) for some lunch. After that, we went to the Aquarium.

I really enjoyed the Aquarium! It felt like real life Finding Nemo! I even touched an anemonie!

More to come later as I finish scrapbooking our trip. This is my first real attempt at digital scrapbooking, so let me know what you think!

Halloween 2009

We had a lot of fun with Halloween this year. Here are the highlights:

Angie was the cutest stewardess ever. Love the hair!

Emily was the perfect Maid Marian. (From Disney's Robin Hood) She came complete with a bushy fox tail!

Mike couldn't help but be himself. He was a Lithium molecule.

The Gibbon's came as hunters. Also loving Coral's new hair-do!

I came as film legend Charlie Chaplin. The moustache made it impossible to smile (or talk, really).

And...

In his crowning Halloween achievement to date...

Preston came as Dwight from The Office! He looked so great!

Angie was kind enough to host a party. We played Guesstures and sat around talking. We have the best friends!

Happy Halloween!

Oh Child...

Little did I expect the juicy surprise that awaited me in my mailbox today. Sister-friends, I am movin' on up! I have received a catalog from a clothing company specializing in my needs as a "divine original", looking to "honor [my] cultural connection".

What is "Ashro"? A cursory glance through the catalog tells me just about everything I need to know: there is not a white face to be found.

Seriously, read this blurb and tell me if doesn't just scream my name:
"Designed for sisters, by sisters, our Afrocentric clothing is created for today's black women. Celebrate your heritage and your sense of style in ethnic-inspired prints and colors. Whether you're going all out for Black History Month or you're just in the mood to express your rich cultural roots, choose from our wide selection of African American apparel. Caftans, mudcloth prints and dashikis are only the beginning of a beautiful adventure in Afrocentric fashion."
If that wasn't enough, with caftans that showcase my rich cultural heritage starting at only $19, and a stunning array of Eliza-Doolittle-esque church suits for the church-going sistah, it might be an offer I can't refuse. (Sure beats the tattered calico dresses, deeply calloused hands and floppy bonnets of my real heritage...)

Oh! And I seem to have the inside scoop on where Aretha Franklin picked up her ravishing hat.

I feel just like Louise Jefferson...

How Lucky You Are

Tonight was wonderful.

I went to see my friend Fathead (some people call her Colleen, but not me) in Midvale City's production of Seussical the Musical with a few friends. It was enchanting! (PS: the show runs through this weekend. Get more info here.)

I drove down with Cam, and it must be said that she is one of my favorite people.

On the way home we were singing "American Pie" at the top of our lungs and talking about the 4th of July, and it occurred to me that this was a moment I would remember for years to come.

I'm sure I'm not the only person who thinks this way: You're in a moment, and then you step outside it and see it for the gem that it is. This was a perfect evening. Good friends, fun play, great weather, cute babies, and clean dishes when I got home! Plus the realization that I have a good friends who see me as I am and vote Yes. Priceless.

So, to all my friends, both far and near, know that you have touched my life. You make it better and inspire moments and memories like the one I just described. How lucky we are!

Über Chic

Hi all! I should probably post something about my life, but (per my previous post) I don't have a lot going on. (I think the most exciting thing I've done lately is steal three roses from an Old English rosebush on my way home from a walk with Cammi. I was like a ninja!)

If you can't live without my razor sharp wit, however, check out uberchicforcheap.blogspot.com, where I will be guest blogging every week or so until late July while my good friend Madeline is in Alaska. My first post is scheduled for Tuesday the 23rd.

Summertime is upon us.

I know because our apartment is downright muggy. Heaven help me!

Other than that, I don't have much to report.

The reasons for this are many, and include, but are not limited to these facts: We don't have kids yet, so no pictures of baby hi-jinks to post. I don't have any fashion finds or decorating ideas for you. My husband and I don't go to concerts, meet celebrities, or run marathons...

And yet, people have told me that I must update my blog.

So I do.

Hope you're enjoying the monotony that is my life. {Work. Homework. Cook. Sleep: Repeat.} (That's right, with the cute brackets.)

I've tried to think of clever things to write about, like my thoughts on the "Five-second rule" or musings about how I miss Paris and am so excited for the trip to Italy that Preston and I are planning to take in two years when Preston graduates... But I don't want to gross you out by admitting that I'm not all that worried about germs and find this rule ludicrous, or make you jealous that a) I have been to Paris, and that b) Preston and I are planning a trip to Italy.

So... I won't post about those things, and I'll keep thinking. Maybe something poignant will present itself...

New nephew part 3!

We had an addition to our family on Saturday, May 16th at about 10:20 pm.
Preston's sister, Maika, and her husband, Casey, are the proud parents of a baby boy, Jace Lee Parker.

Pictures say it better than I do, so enjoy!

Are you thinking that he looks a little like Yoda? Don't be ashamed. We think so too.

Mamma Maika and baby Jace.

Don't hide, Jace! Auntie Kristyn and Uncle "Pinky" are so excited to meet you!

This puts the Erickson nephew-to-niece ratio at 6 to 1.

Life, Liberty, and the Pursuit of my Higher Education...

Spring semester has come to a close, and I am anxiously awaiting my grades. I've worked hard this term. I feel I deserve A's in both of my classes, and I couldn't be prouder of myself for the effort I've put into my studies this time around!

I recently reassessed my commitment to my education and found motivation I never knew I could have. For those of you who may not be familiar with my academic history, it's sufficient to say that it has been less than stellar (in short, I've been a colossal slacker).

My outstanding progress notwithstanding, I just wish there was a way to wash the slate clean. I keep telling Preston that someday our kids may struggle with school, and this will give me empathy, but sometimes I hear comments about people who make mistakes in college, and I feel an overwhelming sense of deep, abiding, burning shame. These mistakes will haunt me my entire life.

It stings at times to be married to the boy genius and try to make peace with all my academic missteps. I well remember the vulnerable moment during our engagement when I tearfully admitted to him that we would have to pay out of pocket for my schooling until I could raise my GPA enough to be eligible for Financial Aid. As kind and understanding as he was, I realized that this is one thing he might never understand completely. He has never failed.

Which leads me to ponder upon the meaning and value of failure.

I feel that my mistakes have conspired to make me stronger and more committed than I might otherwise be. In working through my plan of attack for getting back on track, I have discovered resiliency, determination, faith in myself, and hope that things will turn out the way I need them to. I have learned invaluable lessons about myself, including the way I learn and what actually motivates me (no, really, it takes more than you might think).

It has, of course, crossed my mind that this line of thinking may be little more than self-soothing for my battered ego, but it keeps me going. And with the finish line in sight, there's not much that's more soothing than the knowledge that I can do what I set out to do, even if I did end up taking the long way around.

I'll see you in my cap and gown, August 2010!!!

"Things I Love" Tuesday

I may do this every Tuesday, or maybe just every Tuesday I happen to think of it...

Today I'm going to shamelessly proclaim my love for some beauty products I can't live without. I'd love to hear your favorites, or your opinion on my picks if you've tried them.

In no particular order:

Johnson's Body Care - "Melt Away Stress" Line
Why I love it:
To start, I love the smell. Chamomile and lavender... so soothing.
The lotion moisturizes without leaving me feeling sticky or oily. The perfect bedside companion after long, draining days.
The body wash is also fantastic. Gives a good lather on my loofah and washes clean, and helps my head feel clear and uncluttered in the morning.

CoverGirl Outlast Lip Stain

Why I love it:
Provides a pop of color on my lips without the drying, fading, or rubbing-off effects of lipstick.
Honestly, I have always HATED lipstick. No joke. Most of it seems to change colors once it's been on my lips for a minute or two, so I've stuck with glosses that wear off before you can say lickety-split. Not so with this product.
Cheap for something of its caliber (I've seen similar products sell for $12 for half the amount CG gives you), it goes on quite bright, but fades a bit as it sinks in. If you let it dry before applying balm over the top, it doesn't budge for hours. And the marker-like applicator is super easy to use. I only wish it had been around for my wedding!

Alba Botanicals Coconut Cream Lip Balm
Why I love it:
This stuff feels so nice on your lips! It also tastes and smells like heaven (and I don't like coconut, so I was surprised at how much I loved it). I also like the way it looks - adds a lot of nice shine. Preston approves as well... :)

Bare Escentuals "Prime Time" Eyelid Primer

Why I love it:
Keeps my eyeshadow going strong all day long!
Not exactly a bargain at $16 for a small tube, this is still a great product. Easy to apply, stays put all day. Even keeps my unruly eyeliner at bay (by midday it usually makes an escape attempt down the outer corners of my smiley/squinty eyes). Plus, a little really does go a long way.

Garnier Fructis Smoothing Milk
Why I love it:
I will admit, my hair is generally pretty cooperative stuff. It doesn't misbehave very often. But some days in needs a little management. I love this smoothing milk because it helps keep the fly-aways under control without leaving my hair crispy or sticky. It also doesn't weigh down my fine hair.
I apply to the very ends of damp hair (never more than a dime-sized amount) and blow dry. If fly-aways persist use just a touch to smooth them down.

The Denim Tirade

Well... it's that time again... Time to go jean shopping.

I hate jean shopping for several reasons. The first of which is that it requires me to trade in my broken-in jeans for stiff, new ones. Nevermind that the jeans I'm wearing as I type are almost a full size too big, have been safety pinned to keep them from falling down, and are wearing quite thin between the thighs (as is the usual demise of my jeans...)

But the reason I hate it most right now is that I don't fit into any size. The bigger size is too loose, the smaller size is too tight. I would buy the smaller size, because I know they will stretch out, but in the meantime I look foolish and feel very uncomfortable.

(Now, I will (proudly) admit to having lost a bit of weight since the last time I went jean shopping, but I'm scared to death that it won't have made the slightest difference. I'd almost rather not know that I STILL don't fit into the smaller size jeans.)

And once I have selected the new pair, I will be faced in 6 months or so with the same problem: the dreaded thigh-wear-out. I know I'm not the only person who has this problem, so I'm just going to put it out there.

I tell you, Old Navy is making a mint off of me because I have to buy a new pair of jeans so often!

This time, I'm taking matters into my own hands! I'm not putting jeans out to pasture because of this problem anymore! I'm saying no! I'm being proactive!

My one and only thought is ScotchGuard. I'm not sure if this will really help the problem or not, but I think it's worth a shot. My operating theory is that the ScotchGuard will act as a sort of lubricant, reducing the friction as I walk. If anyone has a better idea, I'd love to hear it.

I'll let you know if this works. Wish me luck!

*UPDATE*

I bought new jeans, and I'm ecstatic to say that they're the smaller size! There might be hope for me yet!!! :D

Pay It Forward

Lucky Me! I get a present made by the beautiful Kalee! But the real excitement is that it is now my privilege to make the same offer that was made to me...

The first five people to leave a comment for this post will get a present made by me! My choice. For you.
This offer does have some restrictions and limitations:
1 - I make no guarantees that you will like what I make! (Though I certainly hope you do! I may ask some questions during the process.)
2 - What I create will be just for you.
3 - It'll be done this year (might take a little while).
4 - You have no clue what it's going to be. It might be a frame, or jewelry. I may make you some cards. I may bake you something for you. Who knows? Not you, that's for sure!

The catch? Oh yes, the catch is that you must re-post this on your blog and make the same offer to the first 5 people who leave a comment and promise to keep sharing the love. The first 5 people to do so win a wonderful homemade gift from yours truly!

PS: If you don't blog, never fear, you can still play along. But you have to promise to make 5 gifts yourself, or perform 5 random acts of kindness to qualify for your present. I don't want anyone to be excluded. I'm an equal-opportunity gifter.

I {Verb}

I'm not feeling clever enough to come up with something of my own to say, so I'm copying.
Saw this on someone else's blog and thought it looked like fun. You can do it, too, if you want to.

*I search: for my keys, every morning, and they are always in the same place...
*I wonder: what other people really think about me.
*I regret: failing so many college classes.
*I love: Preston.
*I care: about families and marriage and the direction we are taking them as a society.
*I always: want a nap.
*I worry: that Preston will be permanently damaged from all the sleep he misses when he stays up late doing homework.
*I am not: perfect. And I'm not too worried about that.
*I remember: when I took time to clean our apartment. Those were nice days. I miss them.
*I believe: in the Church of Jesus Christ of Latter-Day Saints. I believe in Jesus Christ, and I believe that Heavenly Father loves each and every one of us.
*I sing: beautifully.
*I dance: poorly.
*I don’t always: floss. Or vacuum...
*I argue: that many of the world's ills would be cured by truly learning to listen to one another.
*I write: lists on sticky notes.
*I win: the office prize for best leftover lunches.
*I lose: my train of thought a lot.
*I wish: I had time to do all of the things I think about.
*I listen: to mellow music.
*I don't understand: Republicans, but I respect our differences.
*I can usually be found: on the computer at the kitchen table.
*I am scared: of crickets and other basically harmless buggies.
*I need: a dishwasher. (A haircut and some jeans that fit would be nice, too.)
*I forget: that I'm no longer a size 10. And then I remember and it's unpleasant.
*I am happy: most of the time. It would be hard not to be happy being married to Preston. :)

Calf Creek Trip

Spring Break has come! (And gone, unfortunately...) And we finally headed out on our much-anticipated camping trip to Calf Creek Falls on Friday, March 13th.

Gear (and LOTS of it) in tow, we headed down to the Escalante/Grand Staircase area to get our outdoorsey on with Coral, Chaz and Angie.

Saturday was spent Geocaching in an alcove just outside of the town of Escalante.
Then we headed down "Hole-in-the-Rock Road" to Devil's Garden. This "outstanding natural area" was just that, outstanding. There was so much to do and see, we could have spent all day there!
Sunday was spent hiking the trail to Lower Calf Creek Falls. The trail was a bit more challenging than I remember it, but no less beautiful. The weather was great for hiking -- not cold, but not too warm.
Along the way you can make out 900-year-old petroglyphs on the cliff wall. (My family has hiked this trail often, and I was sad to see how much these markings had been faded with time -- still impressive, though.) The falls were a beautiful place to enjoy our lunches.

We were sad to pack up Monday, but glad at the thought of showers and warm beds back home. On our way out of town, we stopped at Anasazi State Park and saw some Anasazi ruins.

Thanks to Coral, Chaz, and Angie for making this trip one of our favorites so far! You guys rock our socks off!!!

When we're helping we're happy!

When I got home from Russia, I got back into school, and then I got married, and I haven't had much time to volunteer. I miss helping! It's always been a big part of my life. And since Angie is leaving me to go improve lives in South Africa, I'm both jealous and inspired.

So... I've been looking for ideas for how I can make a difference in my community and in the world on my limited budget and with my limited schedule. One idea I find particularly intriguing is Kiva.

This is a non-profit organization that deals in person-to-person micro-lending. The idea is that you use PayPal to lend a small amount of money, let's say $25, to an entrepreneur in another country. You help them get their business of the ground, improve their lives and the economy of their community, and they pay you back. You then have 3 options: you can withdraw your money, you can donate it to Kiva (to cover their overhead, etc.), or you can select another entrepreneur and lend it out again!

I've had the thought that groups of friends or families could get together funds an choose together who to give it to. I mean, get 5 friends together, each of you pitch in $5 and you're off! I think you can get updates from the people who are using your money, and the payback rate is 97% (a better return than most "investments" these days, and definitely more rewarding!)

Check out their website to learn more. My brother also had me read this blog post -- seems like this guy has really done his research!
Kiva also has a group on Facebook.

A Penny Saved...

So... I'm not a good blogger, and it's been a long time since I've posted anything. I've thought and thought of interesting things to post, but I have had a bit of a dry spell.

BUT I have now found something worthy of sharing!

I know we all want to save money on groceries, and I was recently introduced to the Community Food Co-op of Utah.

The basic idea is that they order directly from the same local and national producers and wholesalers that service local grocery stores. The more people who order through the co-op, the larger the savings will be, because you order in bulk as a group. Then volunteers divide and distribute the orders to distribution sites across the Wasatch Front, where you pick up your order. (The one nearest me is less than a block away!)

For more information, visit their website. Or take a look at their order form for this month.

The "Full Share" for March costs only $23 and includes the following:
2, 8 oz. Top Sirloin Steaks
4, 5 oz. Pork Chops
2 lb. Chicken Legs and Thighs
1 lb. Lean Ground Beef (85/15)
3 varieties Fresh Fruits
5 varieties Fresh Vegetables
1 loaf of Artisan Wheat Bread from Stoneground (YUM!)
16 oz. brown rice

Wow!!! I'm impressed! And if you don't want to buy the full share, there are smaller options available, also at an amazing price! Each month's selection is different, so keep checking back if this month's selection doesn't float your boat.

March will be my first month ordering through the co-op, and I'm sure it won't be my last! If you want to join me in supporting their efforts, submit your order and meet me at the (would be pretty if it wasn't ORANGE) Presbyterian Church on S. Temple and C St. on Saturday morning, March 28 between 9 and 11. (Or find a pick-up location closer to you here.)
